SUMMER FAVORITE

Chicken Salad is a summer favorite. When I cook chicken, I tend to cook a big batch for left overs. My recipe for a seasoned chicken is a marinade of:

1 cup zesty italian dressing
1/4 cup or less soy sauce
1 tesp. garlic powder
salt and pepper

I put all ingredients in my pan and then basically cook the chicken in the marinade reducing it until it makes a coating on the chicken. This chicken makes a wonderful seasoned chicken salad. I am a farm wife and needed to find an alternative to fried chicken, a family staple in this neck of the woods.


Chicken Salad for 2

3 chicken breasts
2-3 small stalks of celery
1 cup Miracle Whip or Hellmans ( have used both but prefer Hellmans, I just don't have any)
pinch of garlic powder
salt and pepper to taste

I cube or shred the chicken, depending on how much time I have. Cut up the celery. Add salt, pepper, and garlic powder to chicken and celery. Then add mao. This insures that the meat mix is seasoned. refrigerate. I like to make this ahead of time so it has a few hours to sit before serving.





YUM! We are all happy now!

  2. I laughed out loud when I read your comment...you are one sick puppy...I like that in a person!!! Ha! Takes one to know one...and yumm on the chicken salad, a perfect summer lunch...will it ever be summer...?

  3. My wife makes a great chicken salad with grapes in it. Best served in a wrap and eaten outside in the shade.

    You inspired me to get the ingredients for chicken salad sands, today. I've been in kind of a cooking rut....

    Do you do ship stepping stones? I'd like to have you do one for us, but I wasn't sure you did that sort of thing.
