HELP,,,, PLEASE!!!!! PART 2 - ZUCCHINI BREAD

So I went online looking for a zucchini bread recipes and after sorting through several, this is the one I decided to go with. I used to collect cookbooks I have several to pick from, but have gotten quite spoiled with just typing in what I am looking for and up pops an amazing amount of choices. Don't ya just love internet? I did change a few things to suit my taste, just because,,,, that's how I roll...

Zucchini Bread
Prep Time: 25 minutes
Cook Time: 45 minutes (for my 6 mini loaves cook time was 28 minutes)
I used canola oil spray to grease my pans.

Ingredients:
3 cups flour
1-1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon*
1/2 teaspoon nutmeg*
1/4 teaspoon allspice*
1/2 teaspoon ginger*

* I used 1 1/2 teaspoons pumpkin pie spice and 1 3/4 teaspoons cinnamon

3 eggs
1 cup vegetable oil (I used canola oil)
1 1/2 teaspoons vanilla
1 cup light brown sugar *
1/2 cup dark brown sugar *

*I used 1 cup dark brown sugar and 1/2 cup light brown sugar (it's what I had on hand)

2 cups grated zucchini (apprx. one 12-inch long zucchini)

Preparation:Preheat oven to 350 degrees F. Grease and flour 2 loaf pans (I used 6 mini loaf pans). With a wire whisk or fork (Using an electric mixer may make your bread rubbery) combine first set of ingredients. In a separate bowl, combine the second set of ingredients. Gradually add the dry ingredients to the wet. Combine, but don't over mix. (Over mixing may make your bread rubbery).There will still be lumps. Fold in zucchini. Spoon into pans.
Do not add any more liquid as this batter is a little thicker than usual. Not to worry. The zucchini will let some liquid out as the batter bakes.

I hand grated the zucchini. It was not stringy in the bread at all.


This recipe filled these 6 pans perfectly!


YUMM-O!!!!! I gave away 3 loaves and we ate 3 loaves.... Warmed with butter,,,, the best!!!
I will be making more for the freezer, double wrapped. They keep well frozen. These tiny delicious loaves are perfect for a quick breakfast...

FOR THE BIRDS


I've had these plates and cups for 30+ years, they came from cleaning out my grandmother's house in Saginaw, Michigan, my birthplace
(not the house, but the city)... They have been in my attic and then they were in Friends Candle Shed garage. Now, back to my house. I had a big brainstorm to turn these cups and plates into little bird feeders. I found some posts (thanks Piper) to mount them onto and thanks to my bloggy buddies' advice, I used Weldbond to adhere the pieces together....

HELP,,,, PLEASE!!!!!



So when I planted all this zucchini no one told me to plant a little and you will have alot. So I planted a 10ft. row of 2 packages of seed. Holy Mackerel, do I have zucchini, two kinds, green and yellow. I love to cook with the yellow, fried zucchini, zucchini on the grill, zucchini in salads, mixed in anything, but wow, I have more to deal with and give away. I can only pester people with my zucchini so much ya know.
SO ONCE AGAIN, I AM ASKING MY BLOGGY FRIENDS FOR ANY SUGGESTIONS
ANYONE HAVE A GOOD WAY TO FREEZE IT?......
and Sunday, a bunch is going to my church on the bench by the door!

FRIENDS CANDLE SHED, NEW OPEN SIGN


Isn't this the cutest chair you have seen! I went to the shed yesterday and Piper just got a whim to change the open sign that she puts out on the sidewalk in front of her store. She gets these brain storms and will have it done in the drop of a hat! Well, 2 hours later, this was on the sidewalk. Isn't it just adorable. She is so talented!

This cute little plate can be used for anything. In the kitchen, under a candle, for your jewelry, in the bathroom. You get the picture. It is a 6" plate with stained glass and grout. It has been sealed so it can be used outdoors too!

GLASS TREASURES, OH WHAT TO DO?


I stopped at my local Salvation Army store just to see if there were any shiny glass pieces of any kind and holy mackeral, I hit the jackpot! They were all on a shelf just staring at me. My eyes were glazed over and I could not resist the magnetic pull to these gems. So I purchased every one of them, brought them home, put them in the dishwasher and voila! THEY ARE MAGNIFICENT! Now what am I going to do with them????
SO THIS IS WHERE YOU COME IN TO PLAY!!!
WHAT WOULD YOU DO WITH ALL OF THESE PIECES?
I AM LOOKING FOR SUGGESTIONS?
I WILL WAIT 5 DAYS AND THEN, I WILL CREATE....
ANYONE KNOW OF A GOOD GLASS ON GLASS GLUE???

LILIES, LOVE LILIES


Okay, so the rain is coming, looking dark to the west. So my camera and I ran out this early morning and took these pics of the lilies that bloomed overnight, I swear, overnight. Because we have had so much rain and wind and other flowers have been ruined by it, I wanted to make sure I at least got pics of these flowers I just planted this early spring. They are just gorgeous. I love the colors...


This lily bush? I planted last fall. I got it at a local garden center with no tag on it, just that it was a lily. Oh my, it is a favorite now! Look at all the blooms and it stands about 36" high with 3" flowers. I have not looked up the name yet... I am very pleased, no, alot pleased with my grab bag special!!!
